Wild West is a traditional western style of cider made 100% from cider apple varieties. It is a dry cider, with a good measure of tannin coming from the fruit and little acidity - making it drier and more full bodied than the other 146 ciders
This year the fruit for Wild West came from the Strong Orchard, just north of Bridport and another orchard in Somerset was used for its bitter sharp apples.
For the 2012, the Wild West blend was improved to include a wider range of varieties and now includes bittersweets, sweets, bittersharps and sharps. This gave it a rounded and full bodied flavour with a little more acid but full tannins (whilst being less harsh and dry). Blenheim Orange replaced Bramley for additional acid, which gave a nuttier, smoother acid base.

The cider was pressed during November and December of 2011 and blended during fermentation (using natural yeast).
